Chef Takeshi Yamamoto

Born in Osaka and trained in the street stalls of Dotonbori before earning a Michelin star in Shibuya. Chef Yamamoto spent fifteen years perfecting the balance between traditional technique and bold, modern flavor.

His approach to ramen is legendary: every bowl starts with a bone broth simmered for twelve hours, finished with house-made tare that he adjusts daily. The sushi counter features fish flown in three times weekly from Tsukiji Market.
